Abstract
Processing and conservation of edible shellfish in the Ain Temouchent region.
In Algeria, mussels are of relatively high economic and commercial interest, especially the Mytilus
galloprovincialis mussel.
This is the first attempt, aimed at the conservation, processing and evaluation of shellfish species
of commercial interest in particular, where it is based on the physicochemical and
microbiological analysis of preserved mussels.
On the other hand, the treatment of production waste, which serves to reduce the rate of pollution
and invest in areas other than animal and plant production.
