Abstract
The present work focused on the physicochemical and microbiological analyzes of two types
of IFRUIT juice, fruit juice and milk fruit juice, marketed in the wilayaofAinTemouchent
(Algeria).
Physicochemical analyzes (pH, acidity and degree of brix), as well as microbiological
analyzes, focused on searching and counting the total aerobicmesophilic flora, total and faecal
coliforms, staphylococcus aureusand salmonella as well as yeasts and molds , indicate that
both types of juice meet the standards of the Algerian regulations
