dc.description.abstractThe identification of new strains including lactobacilli with probiotic properties is the main objective of our work. In this study, 15 strains of lactic acid bacteria were isolated from three different samples of raw cow's milk harvested in the region of Ain Témouchent. The phenotypic identification showed that ten strains belonged to the genus Lactobacillus. The probiotic profile of lactobacilli strains was examined in in two ways: In vitro: we were interested to evaluate their ability to survive in gastric and intestinal simulated conditions, time to self-aggregation and co-aggregation and pathogenic bacteria, the percentage of hydrophobicity and the antibacterial activity. Their safety aspect was also examined by hemolytic activity and antibiotic resistance. At the end two strains (L. plantarum, L. acidophilus) was crossed the barriers of selection and are colonised potentially probiotic bacteria. In vivo: The strains selected after the first screening were then tested in animal model, to confirm anti-inflammatory potential of this stainsen_US
