Résumé
This study focuses on the production of pumpkin powder (Cucurbita spp.) using modern
technology while highlighting its nutritional, economic, and environmental significance in
Algeria. The findings revealed that pumpkin powder has high nutritional value due to its
richness in dietary fibers, vitamins, minerals, and antioxidant compounds, making it a
promising ingredient for various food industries. The study also demonstrated that the drying
method used can produce high-quality powder while preserving the nutritional properties of
the product and reducing post-harvest losses.
From an economic point of view, this project contributes to the valorization of local
agricultural products and helps reduce the costs associated with importing certain raw
materials used in food processing industries. It also encourages investment and job creation in
the agro-food sector. In addition, the study highlights the importance of reusing by-products
generated during processing, which can be incorporated into livestock and poultry feed, while
leaves and organic residues may be utilized as natural fertilizers to improve soil fertility.
Therefore, this project supports the principles of sustainable development through waste
reduction, environmental protection, and the promotion of a circular economy.
