Abstract
This work has allowed us to examine the diet adopted by the population in both rural and
urban areas in the region of Ain Témouchent, as well as the factors that influence eating
habits, for this we have proposed a survey carried out on a sample of 100 individuals
distributed in these two areas for the purpose of comparison, then it was found that the
population of the rural area still maintains a simple, natural and traditional way of life with a
diet based on durum wheat, with vegetables, olive oil, little meat and local fruits,
unfortunately; this model tends to disappear mainly in urban areas to give way to food
practices related to what is called the westernization of food which is dominated by fast food
and the consumption of processed products
