Amaranthus cruenthus is a genus of plant in the Amaranthaceae family, making it an important element for their numerous medicinal properties, but not only that in addition to decorating our gardens.
The aqueous, ethanolic and ethyl acetate extracts were obtained by the extraction method with yields respectively (32.4%, 18.6% and 6.5%); the ethanolic extract has a higher dosage content of polyphenols followed by aqueous and that of ethyl acetate extract by respectively (1.217mg / g, 0.246mg / g and 0.0725mg / g).
The results of the antioxidant activity prove that the ethanolic extract has the highest antioxidant activity (IC50 = 0.028mg / ml), followed by the ethyl acetate extract and the aqueous extract with respectively (CI = 1.498mg / ml and CI = 1.621mg / ml).
