VALORISATION DES COPRODUITS D’ABATTAGE : CAS DE VOLAILLE

Abstract

The amount of industrial waste, including that from agri-food activities and especially from slaughterhouses, is continuously increasing. Slaughterhouse waste can be a valuable raw material, rich in high quality nutrients. The present work is aimed at acquiring knowledge about poultry waste, as its valorization makes possible the production of a good quality product, hygienic, nutritional, organoleptic and valorizable.
