Abstract
Ceratonia siliqua, is a popular tree in the Mediterranean region belongs to the legume family
(Fabaceae). These pods considered to be the most important part due to the presence of the secondary
metabolites which exert several important biological properties such as anticancer, antioxidant,
antimicrobial and anti-inflammatory properties. In this study, C. siliqua pods, purchased commercially
from Ain Témouchent, were studied for their antioxidant, anti-inflammatory and enzymatic biological
properties.
The results obtained showed that the pods of C.siliqua have a catalase activity which makes it possible
to degrade 6.58 mM of H2O2 in 1 min 30 sec and an anti-radical activity which allows the degradation
of DPPH with an IC50 of 35.0576 mg/mL . Also these pods contain inhibitory activity against the
denaturation of human albumin and ovalbumin (presence of anti-inflammatory activity) with an IC50
value of 50.2578 mg/mL and 47.4939 mg/mL, respectively. and they have amylase and lipase
activities with, respectively, optimum pHs of 5.5 and (7 and 8.5), optimum temperatures of 40°C and
30°C, and stability of the 2 enzymes to thermal and acid-acid treatments. base, gelatinase activity was
not detected.
