Abstract
The dairy sector is a significant part of the world, in terms of contributing to the use of
farmland, employment and wealth creation. Our research focuses on assessing the physicochemical
quality of cow's milk and the effects of certain influencing factors. Our results are based on 150
milk samples from a monthly dairy inspection carried out on four farms (75 dairy cows, 56% of
them Prim'Holstein and 44% Montbeliardes.). The data was reviewed using the GLM procedure.
The results show that the physico-chemical quality of milk is relatively poor, with variations
depending on the factors examined. Our results show that protein content and fat content were
estimated to be 31,2±1,53 g/L and 37,31±0,94g/L respectively. On another side, the acidity, density
and lactose content of milk are 17,32±0,78°D, 1030,01±1,85 and 46,31±2,503g/l respectively. A
significant influence of parity, race, especially and also stage of lactation and breeding on the
physicochemical quality of milk (p<0,05) were revealed. These studies on genotype-environmental
interaction are worthy of further study.
