This study aims to monitor the manufacturing process and evaluate some physicochemical, microbiological, and sensory parameters of milk and drinking yogurt produced by GIPLAIT – Tlemcen, with the goal of ensuring safe and high-quality products for consumers. The results of the physicochemical and biological analyses comply with Algerian standards and international requirements. Sensory analysis results show that the odor is flawless, the taste is good, indicating that both analyzed products are of satisfactory and compliant quality. In light of these results, it can be said that the physicochemical, microbiological, and sensory qualities of the studied products are acceptable for all examined parameters.
