dc.description.abstractBunium incrassatum is familiar plants of the rural environments present in the regions of the Algerian tell. It belongs to the Apiaceae family, known locally as "Talghouda". It is widely used in traditional medicine in our region to treat thyroid diseases. The objective of the present study is to valorize different extracts of the tubers of the plant Bunium incrassatum by determining the amount of polyphenols and flavonoids and to evaluate the anti-inflammatory activity in vitro using two methods, the human red blood cell stabilization method and the human albumin protein denaturation method. The determination of total polyphenols and flavonoids revealed variable contents in the extracts with estimated levels of 2,30 mg EAG/gMS and 1,15 mg EAG/gMS respectively for the aqueous extract. The results reveal that the extracts of Bunium incrassatum (mainly the aqueous extract) exert an anti-inflammatory effect close to that of salicylic acid (reference molecule). Moreover, the aqueous extract inhibits the denaturation of albumin in a range of 50-70%, which makes it possible to use it as an alternative treatment in the prevention of inflammation These results can be considered as a starting point for further studies directed to the determination of active compounds in the extracts of the plant Bunium incrassatum.en_US
