Abstract: Meat is considered to be one of the vehicles of many diseases in humans. This study aims to assess bacteriological quality surface of the ovine carcasses in the slaughterhouse of Aïn Témouchent. The samples were carried out on 06 carcasses stamped while following the non destructrive method (cleaning of 100 cm ²) taken at the end of the slaughter. The study focused on the research and the enumeration of the indicating germs of the contamination of the carcasses at four anatomical sites: flank, shoulder, necklace and thigh. The total mesophile aerobic flora, total coliforms, enterobacteries and Staphylcocci aureus were determined. The results of the enumeration show that 50% of carcasses have unsatisfactory contamination and none have submitted acceptable bacteriological criteria. The FMAT is the most widespread flora (between 3,71 and 4,03 log 10 UFC/cm2). The search of E.coli gave a positive result (+), the most certain proof of a contamination of intestinal origin, human or animal. No Salmonella was detected. The study showed that the shoulder was the more contaminated area by average charge 3,6 log 10 UFC/cm².
