dc.description.abstractMolds are microorganisms that often contaminate dehydrated products such as milk powder. They can grow on these substrates by producing secondary metabolites called mycotoxins that are harmful to the human. The objective of this study was to research and identify molds isolated from milk powder in Ain Témouchent province. To achieve our objectives, 27 samples were collected and analyzed in the region of Ain Témouchent. The results of research and enumeration of molds on a medium of yeast extract, dextrose, show that 74.07% of the samples taken are contaminated by molds with a concentration ranged between 20 and 80 cfu/g. Then, 70 isolates obtained were microscopically identified as Aspergillus spp. (33.33%), Trichoderma spp. (14.81%), Penicillium ssp (11.11%), Ulocladium (7.41%), Clodosporium spp (7.41%), Rhizocyone ssp (3.70%). Only isolates of Pencillium spp. and Aspergillus spp. were produced mycotoxins on CEA medium. These results were confirmed by the production of mycotoxins on YES broths followed by detection on TLC. These results present a socio-economic impact in prevention and risk analysis to protect the consumer and prevent food spoilage.en_US
