dc.description.abstractTomatoes play an important role in Algeria's economy, both in terms of agricultural production and agri-food processing. The supply and demand for tomatoes is a major challenge due to their high susceptibility to spoilage due to their high water content (91%), which favors the growth of numerous micro-organisms. These characteristics lead to significant yield losses, which have a negative impact on farmers and the economy in general. The idea behind the “Biomaticha” project is to manage surplus tomato production, which farmers are unable to sell on the market. The project underlines the importance of this transformation in terms of reducing food waste, strengthening food security, contributing to the national economy and the sustainability of agriculture by creating value-added products from tomatoes that would otherwise be thrown away. The versatility, nutritional properties and long shelf life of tomato powder make it a valuable ingredient for the food industry, industry and international trade. "Biomaticha's organic tomato powder project can have a significant positive impact on the local economy, job creation, food security and sustainability. The project's success will depend on a number of factors, such as the quality of the raw material, the efficiency of processing, access to markets and the support of government policies.en_US
