Abstract: Milk is a product with high nutritional value and occupies an important place in the diet of the Algerian population. It constitutes a favorable environment for microorganisms .provenant often following a lack of hygiene. In general, they can occur before milking, at the time of milking, during transport or during processing. In the present study, which took place in the wilaya of Constantine, we analyzed 45 samples taken from 3 farms. The results show that the majority of samples are contaminated with fecal coliforms, ie a rate of 87% of which 100% are E coli. The antibiogram revealed fairly high resistance rates for some antibiotics such as ampicillin (49.15%), cefoxitin (48.32%) and amoxicillin (46.19%). In contrast, tetracycline and calvulanic acid amoxicillin recorded rather low resistance rates with 13.17% and 12.3% respectively, or even very low for cefotaxime (6.49%) and cefixime (7.33 %). No resistance was observed for gentamicin, amikacin, tobramicin, ceftriaxone and chloronphenicol.
