dc.description.abstractHerbal medicine is recognized as the sum of knowledge, discoveries and practices that revolve around theories and experiences whose objective is to meet the needs of human beings in several fields in general and in the pharmacology in particular. El Zanjabil or ginger, also called Zingiber officinale is a medicinal and aromatic plant, belonging to the family of Zingiberaceae, which is recommended for its properties and medicinal properties. Three extraction methods were applied for the two dry and fresh forms of the ginger rhizome of Chinese origin, namely maceration, under reflux and soxhlet. Our work allowed us to determine the yield of each extract. The highest rate was obtained by the reflux method of the dry form followed by the fresh form. These results allow better optimization of the parameters influencing the yield. The antioxidant activity was evaluated in vitro using two reference methods. The extract from the reflux technique of dry ginger has demonstrated the greatest anti-free radical capacity with an IC50 of the order of 1,6591 mg /mL. Regarding the FRAP method, the extract obtained by the soxhlet technique recorded the highest reduction power. The results show very remarkable differences between the two forms of rhizomes as well as between the different extraction methods used. The results obtained after carrying out this study have clearly confirmed that ginger can serve as an alternative source of chemical anti- free radical agents, and which helps protect the body against oxidative damage caused by free radicals.en_US
