Abstract: Cardiovascular diseases are the leading cause of death worldwide. Cholesterol is one of the major risk factors for these diseases, hence the need for natural sources that can lower cholesterol has been of interest since the drugs used cause adverse effects. A strain of probiotic lactic acid bacteria with a potential lipid-lowering effect has been isolated from honey. The strain was identified Lactobacillus Plantarum (LB23), the cholesterol-lowering effects of this strain were studied in male Balb/C mice suffering from high-fat diet-induced hypercholesterolemia. The mice were fed a diet high in cholesterol and were divided into the following three experimental groups: Control group (Normal diet), mice fed a fatty diet, and mice fed a fatty diet + L. plantarum (LB23 ). At the end of the experiment, blood was collected and analyzed. The results indicated that L. plantarum LB23 intervention significantly inhibited body weight growth, improved blood serum biochemical parameters (TC, TG, LDL-c, and HDL-c) related to lipid metabolism in mice. These findings present new evidence supporting that L .plantarum LB23 has the potential to enhance lipid metabolism and could be used as a potential functional food for the prevention of hyperlipidemia.
