Abstract
Salvia hispanica is a plant species, rich in macro and micronutrients of the lamiaceae family. These seeds
have valuable biological, medicinal, pharmaceutical and nutritional properties, for this, the objective of our
work was to research biological properties in the seeds of S.hispanica (bought from the trade of the city of
Ain Temouchent), such as antioxidant properties (catalasic activity and trapping activity of DPPH), antiinflammatory
properties (inhibition of ovalbumin denaturation) and enzymatic properties (amylase,
lipasicand gelatinasic) were investigated.
The results obtained show that these seeds have a catalasic activity that allowed to degrade 8.56 mM of
H2O2 in 4min and atrapping activity of DPPH with an IC50 of 2.264 mg/mL, as well as an inhibitory activity
of ovalbumin denaturation with anIC50 of 38.6765 mg/mL. Salvia hispanica seed solution also has amylase
and lipasic activity with optimal pHs of 5.5 and 7,respectively, and optimal temperatures of 50°C and 30°C,
respectively. However, no gelatinasic activity was detected. Amylases are more stable, with thermal and
acid-base treatments than lipases.
